ORIGINAL STORY:
On September 3, 2025, a routine inspection at Cracker Barrel #79 in Crossville, resulted in a score of 67, indicating multiple critical violations. For reference, any score below 70 is considered a failing grade.
Key issues included a lack of managerial control due to numerous critical violations, an employee drinking from an unapproved open can in the walk-in cooler, bare hand contact with cooked bacon, and a dish machine failing to reach the required 160°F (only reaching 152°F).
Additionally, several food items in a malfunctioning lowboy unit, including raw steak, hamburger patties, catfish, trout, and country ham, were found at unsafe temperatures (49.4°F–56.4°F), leading to the embargo of approximately 45 lbs of product.
Other violations involved improper storage of employee drinks, unrestrained facial hair, wet wiping cloths and utensils stored incorrectly, wet-stacked pans, dirty single-serve utensil containers, dust buildup in the walk-in cooler, and unclean floors, walls, and ceiling tiles.
Corrective actions included educating staff on proper practices, disposing of non-compliant items, and setting up a three-compartment sink. A follow-up inspection was scheduled to verify corrections.
