CROSSVILLE PIZZA RESTAURANT RECEIVES NEAR-FAILING HEALTH INSPECTION SCORE

Pasquale’s Autentico, an old-fashioned pizza restauraunt located at 200 Woodmere Mall in Crossville, recieved a near-failing grade of 74. For reference, a failing grade is anything below a 70.

The inspection at Pasquale’s Autentico by the Tennessee Department of Health indicated multiple critical violations, and their report mentions the establishment showed issues with managerial control, food safety practices, and facility cleanliness.

Key Violations include:

Managerial Control (Critical): Lack of control due to numerous critical violations. To be reviewed at follow-up.
Handwashing Sink (Critical): No paper towels, improperly configured (second occurrence). Corrected on-site, risk control plan to be implemented.
Food Condition (Critical): Dented can of roasted red peppers stored with ready-to-use food. Disposed of during inspection.
Food Storage (Critical): Raw chicken stored on cheese in fridge. Relocated to proper storage during inspection.
Hot Holding (Critical): Meatballs in crockpot at 115.7°F (below 135°F). Reheated to 188.3°F after education.
Cold Holding (Critical): Multiple items (sausage crumbs, chicken, meatballs, cheese) above 41°F in prep cooler (second occurrence). Cooler adjusted and iced; risk control plan to follow.
Date Marking (Critical): Cooked chicken and meatballs not properly date-marked. Labeled during inspection.
Contamination Prevention: Open drink cans stored improperly; ice machine had black buildup.
Wiping Cloths: Wet cloths stored improperly on countertops instead of sanitizer buckets.
Utensil Storage: Scoop handle stored in powdery food product.
Cleanliness: Food debris on countertops, shelving, and cold units; dirty walls and floors near hand sink.

Several violations, including managerial control, handwashing sink setup, food storage, temperature control, and date marking, will be checked at a follow-up inspection.
