FOLLOW-UP HEALTH INSPECTION TO BE DONE AT RUBY TUESDAY’S  IN CROSSVILLE

A health inspector recently found a number of violations at Ruby Tuesday’s on North Main Street in Crossville that could cause foodborne illness. The restaurant scores a 76 which is passing.  A score below 70 is failing.

The inspection revealed:

  • Food debris and metal shavings found accumulated around a can opener blade that should be cleaned after use.
  • An employee working in the kitchen who had been using a cellphone grabbed clean dishes and did not wash his hands first. They are required to not only wash their hands but put on gloves.
  • Food containers that had been put away as clean were found with food particles still in them. A temperature check on a piece of chicken off the grill found it between 131 and 143 degrees. The proper hot temperature is 165 and above to kill bacteria growth. The employee took it back to cook longer. A recheck showed the piece of chicken at 178 degrees. The restaurant was advised to keep a meat thermometer at the grill to check foods.
  • Metal and plastic pans next to dish washer were stacked up wet. Clean utensils on the server line were stored in dirty containers.
  • Built up food debris was noted on equipment throughout the kitchen.
  • Floor and ceiling tiles in poor condition. Excessive dust, grease and grime accumulated on vents in kitchen.
  • Lights in dry storage not covered/protected.
  • No paper towers at hand sink upon entry to kitchen.

A follow-up inspection will be done at Ruby Tuesday’s in Crossville soon to review corrections.
